I had already met Donna (online) at this point last year, but we didn't get together for Thanksgiving, so this year will be our first. I was volunteered to go into Price Chopper the other day to pick up the turkey, and I came back with a 21-pounder (as instructed). I was never a fan of turkey, although I came to tolerate it over the years when it was cooked juicy (no pressure, sweetie, but it better be juicy or it's chicken next year). On second thought, we can try this recipe next year of something goes wrong this year...
Ingredients:
1 whole turkey
1 large lemon, cut into halves
sprig of rosemary
salt and pepper to taste
butter or olive oil, whichever you prefer

Directions:
Heat oven to 350 degrees
Rub butter or oil over the skin of the turkey until it is completely coated.
Sprinkle with salt and pepper and any other seasonings you prefer.
Take a knife and gently separate the skin from the breast meat;
Slide lemon halves under the skin with the peel side up, one on each side. This way the juice from the lemon will release into the meat.
Place sprig of rosemary into the turkey.
Cover and bake for 30-45 minutes. Remove cover and continue to roast until juices run clear, basting every 15-20 minutes.
If you've followed these steps correctly, your turkey should look like the one in the picture below.

We're only having a few guests for dinner, so there will be plenty of left-overs (ugh). I'll find something at the grocery store this afternoon to satisfy myself while she's eating turkey salad and turkey sandwiches--maybe lamb chops--yummm....she'll never want any of that! I'd go with liver also, but then I might end up preferring the turkey left-overs. Oh well, there's always cream cheese and crackers....
Hope you have have a wonderful holiday--drive safely. At least we won't be on the road this weekend. Donna was thinking about shopping on Friday, but I think that idea will pass. There's nothing that won't keep until next week, and the though of all those crowds... I don't even like going to Wal-Mart after 10am, just too crowded. And the parking... Bad enough with a little car, but a 20-foot truck makes things tough with people walking all over the parking lot (hmmm..do you think that will discourage her?).
